新鲜茉莉花直接泡茶不好。经过晒、烘等杀青后,去掉青涩味,干花才好泡用最好经脱水处理制成干茉莉花,既可泡茶,又可熬粥。家中栽有茉莉花,可以用以下简单的方法来自制茉莉花茶。
自制自饮,别有滋味:
先把茶叶(一般都是选用上好的绿茶)用容器盛放在火上缓慢加热,至茶叶感到烫手时为止,凉后放入盒内备用。注意莫要过火变焦。
采摘吐香正浓的茉莉花放入盒内(50克茶叶约需10至20朵花),与茶叶混和均匀,不要盖盖,使其自然完成茉莉花吐香与茶叶吸香过程。大约一个整天时间以后,把花从茶叶中拣出来,再将茶叶于火上烘热去潮,冷却后即成茉莉花茶。焙干后的茉莉花留在茶叶内也可。如欲茶叶香气更浓些,以上过程可以反复进行若干次。
特种茉莉花茶的冲泡、宜用玻璃杯,水温80—90摄氏度为宜。其它茉莉花茶,如银毫、特级、一级等,宜选用瓷盖碗茶杯,水温宜高,接近100摄氏度为佳,通常茶水的比例为1:50,每泡冲泡时间为3--5分钟。
